Ingredients:

• 4 cups of whole wheat flour
• 1 teaspoon baking powder
• 1 teaspoon cinnamon
• 1 teaspoon nutmeg
• 2 ripe bananas, mashed
• 2 large carrots, shredded
• 1 large egg
• 1/2 teaspoon of vanilla
• 2 tablespoons of honey
• 3 cups of water

Preparation:

• Preheat oven to 375
• Lightly grease a 12-cupcake pan or spray with non-stock spray
• In a large bowl mix the flour, baking powder, cinnamon and nutmeg in a bowl
• In another bowl, mix the water, banana, carrots, egg, vanilla and honey
• Add the flour mixture to the banana carrot mash and mix thoroughly
• Fill each cup about 3/4 full
• Bake for 50 – 55 minutes
• Place cupcakes on a wire rack to cool before serving

Yield: 12 cupcakes
