Liver/Lamb Yummies


1 lb beef liver
2 jars lamb baby food
3 cloves fresh garlic

 

Pulse ingredients together in a food processor (if you don't have a food processor I'm assuming you can do the modifications:) Add 1 cup ground pumpkin seeds and 1 cup ground sunflower seeds and pulse just to mix. Add (sifted) chickpea flour a little at a time until until the mixture gets stiff. The mixture will be very wet even when it's stiff. Flour the board, counter, with more chickpea flour and turn out the dough. Knead more chick pea flour into the dough until it is manageable (I used not quite a lb of cp flour by the end, it will depend on the weather, humidity, how wet the liver was, etc.) For the first batch I used cookie cutters (to give as gifts) I just rolled and cut the rest for my dogs. Roll about 1/8 - 1/4 in and cut. Preheat the oven to 350 degrees before you start. Oil the pan (cookies have no oil) bake at 350 for 30 min, turn the cookies over (they should be brown on the bottom) turn the oven down to 200 degrees for about 30 minutes and then turn to the lowest temp (mine is 170) and cook until they dry out.
 

 

The second batch I put in the refrigerator for a couple of hours, rolled, cut and baked the same except I used a convection oven and they finished a lot faster. I think cutting them and letting them sit out to dry before cooking would work well. These turned out great.
