Christmas Cupcake recipe for PONS
Ingredients:
- 4 cups of whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 2 ripe bananas, mashed
- 2 large carrots, shredded
- 1 large egg
- 1/2 teaspoon of vanilla
- 2 tablespoons of honey
- 3 cups of water
Preparation:
- Preheat oven to 375
- Lightly grease a 12-cupcake pan or spray with non-stock spray
- In a large bowl mix the flour, baking powder, cinnamon and nutmeg in a bowl
- In another bowl, mix the water, banana, carrots, egg, vanilla and honey
- Add the flour mixture to the banana carrot mash and mix thoroughly
- Fill each cup about 3/4 full
- Bake for 50 – 55 minutes
- Place cupcakes on a wire rack to cool before serving
Yield: 12 cupcakes
