Christmas Cupcake recipe for PONS
Ingredients:

4 cups of whole wheat flour
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon nutmeg
2 ripe bananas, mashed
2 large carrots, shredded
1 large egg
1/2 teaspoon of vanilla
2 tablespoons of honey
3 cups of water
Preparation:

Preheat oven to 375
Lightly grease a 12-cupcake pan or spray
with non-stock spray
In a large bowl mix the flour, baking
powder, cinnamon and nutmeg in a bowl
In another bowl, mix the water, banana,
carrots, egg, vanilla and honey
Add the flour mixture to the banana
carrot mash and mix thoroughly
Fill each cup about 3/4 full
Bake for 50 – 55 minutes
Place cupcakes on a wire rack to cool
before serving
Yield: 12 cupcakes
